New Release - 13 September 2015
Dear Wine Lovers, Shed Dwellers and Winos ! Been too long between drinks…. So to speak.
I’m really excited to be able to offer to you our latest wines and to show off our new look/labels etc. Yeee Haa !
First of all though there is some bad news: Dio 2009 is Sold Out, Piombo Shiraz 2006 Sold Out and Valletta 2006 is very near extinct with less than ten dozen remaining.
Valletta 2006 Fans, don’t hesitate to place an order as it is First in First Served for the last few dozen.
Good news: There are three new kids on the block and they are all rippers. Each of the new wines below have lived up to my expectations and I’m sure you’ll be happy with them.
Other new wines on the very near horizon include our first Chardy, Rosato, Piombo & Dio. I’ll keep you tuned on their progress.
International Fans and Prospective buyers/drinkers of our wines, we can now send wine directly to your door ! We have partnered up with a company capable of moving wine around the globe and considering there are no Australian wine taxes applied, the wine is landed to your door at a competitive price. Drop me a line (paul@sellickshillwines.com) and I’ll walk you through it and prepare you a quote.

Screw It - 13 September 2015
To Screw or not to Screw, that is the burning question…
Most of you that know me, know that I’m a traditionalist by nature. I love natural products, real food, cream in my milk and wine made without intervention.
long have I been scorned by some of my mates and wine-scribes (see Philip White’s fantastic rundown on closures and why cork should not be used, go to his fantastic blog Drinkster.blogspot.com for the most informative, entertaining and straight up fabulous word lunch you’ll find) for continuing to use corks… well, I’ve seen the light and made the change. I’ll try to explain why.
I love corks, I love the romance BUT… At the end of really great vintage this year, as we do each year, we sit, burn charcoal, grill brontosaurus steaks and drink some of our best reds.
I head to the shed to dig out some of my back vintages, salivating I hunt down the cork screw and dig into one of my favourite drops (2005 Diavolo). To my disappointment, the wine isn’t quite right, not Tainted but not singing like it should. Oh well, this happens and I dig out another, only to find it is tainted (TCA: Trichloroanisole) and the wine, again, is spoilt! Shit….. One more for luck. You guessed it, not quite right ! AAAGGGGHHHH !!! I all but give up, start swearing and throwing things. One last shot. Really not happy and more than annoyed at the ease some of my companions have un-screwed their wines which look just like they should. Finally we have a wine that is free from any annoying faults.
This is just not cool, especially if one of my lovely members/customers came across a batch similar to what I had.
Generally, I’ve had good luck with the corks but when they fail they tend to do it spectacularly.
So, Screw cap it is! Greco 2013, Diavolo 2010, Valletta 2010 are all under screw cap and I will continue to put all of my new wines under screw cap for now.
I will, of-course keep a close eye on the new wines under the new closure and reserve future judgement until it has either proven itself or not.
What are you’re thoughts ? I’d really like to know what you think about the different closures so drop me a line, paul@sellickshillwines.com
Salute! Paul.
