DIAVOLO 2010
Variety: Shirz / Cabernet
70% / 30%
Region: McLaren Vale
Sub-region: Sellicks Hill
“ Diavolo is my baby. The first of my Super Premium wines, I have a real soft-spot for Old-shool Australian blends. When these varieties are blended right I feel they absolutely compliment each other and are stronger for the relationship.
Diavolo, like most of our reds, likes to be de-canted (if you can wait) and will really shine if given just a little time to breath.
Drink it now or put it down for as long as you see fit, this puppy isn’t going anywhere fast “

CHARDONNAY 2015
Variety: Chardonnay
100%
Region: Adelaide Hills
Sub-region: Christmas Hill & Paracombe
“ Golden, spent flint, licked slate, honeyed fruits, bring me a roast chook with all the trimings to feast like a king.
My only wine not from the beautiful Sellicks Hill. Why? Because I love a good Chardy and I’ve found that it’s best suited, to my taste, in the slightly cooler region of the Adelaide Hills. There is a tiny volume of local Sellicks fruit in this blend just to keep it real. “

VALLETTA 2010
Variety: Shiraz / Grenache / Mourvedre
80% / 15% / 5%
Region: McLaren Vale
Sub-region: Sellicks Hill
“ We refer to this wine as the Giant Killer, because it packs a punch well above it’s weight.
Spicy, cheeky and certainly no wall flower. For all its front, Valletta loves to show its more elegant side when given time to breathe
Drink now and into the future “
Paul.
“ Bronzed rose, melons, bright and seductive fruits of the forest, for Rosato I have traded my soul
I’ve been making/playing with a traditional style rose for years and finally put one into bottle with a label.
This wine has the promise of fruit sweetness from the Grenache yet finishes relatively dry…. try to stop at one on these warm spring and summer days. “
Paul.
GRECO 2013
Variety: Greco
100%
Region: McLaren Vale
Sub-region: Sellicks Hill
“ McLaren Vales First Greco, this fruit is 100% grown here on the foothills of Sellicks.
Perfectly suited to our climate, this white produces a really versatile Food friendly wine, which makes it just that little bit harder to leave alone…. I can’t help myself.
Stick it in the ice-box on a warm Spring/Summer day or drink at room temperature when the celcius is a little lower.
Our Gift to you. “

this trilogy of varieties has proven itself time and again.
The beautiful fresh fruits of our friend grenache, round and rolling mouthfilling shiraz and that lovely spice with the beautiful finishing tannins of the earthy Mourvedre.
